I love this smoothie as a nutritious and energizing start to a summer day. It’s truly a meal in a glass. Packed with fibre, protein, healthy fats, and antioxidants, you’ll be sailing through to lunch with a spring in your step.
1 cup unsweetened cashew milk
1/2 avocado
1/4 cup sprouts of your choice (broccoli, sunflower etc.)
1 handful fresh mint
2 pitted dates
1 teaspoon cacao nibs
1 teaspoon almond butter
1 teaspoon hemp seeds
Add water as needed, and blend well. Sprinkle a dash of nutmeg or cinnamon on top to make your morning complete.
Black Bean Bonanza
Beans aren’t commonly found on the breakfast menu in North America, but in most of the Blue Zones, they feature prominently. Given the chance, they’re a delicious addition to your morning repertoire. Try this version with brown rice for a true twist on breakfast. (Makes enough for 2 people)
1 cup brown rice, steamed the evening before
1 can black or pinto beans, rinsed (or 2 cups from scratch, which takes a little planning, but is worth it)
1 tomato, diced
1/2 red onion, diced
1 avocado, pitted and sliced lengthwise
2 teaspoons coconut or avocado oil
a pinch each of chili powder, cumin, turmeric, black pepper, and sea salt
cilantro and lime for garnish
Heat oil in a pan. Sauté rice, beans, tomato, and onion until lightly cooked. Add spices and blend well. Remove from heat and serve with avocado, chopped cilantro and fresh lime wedges.
The Best Avocado Toast
The simplicity of this recipe belies the fact that it is totally swoon-worthy.
1 slice sprouted grain bread, toasted
1-2 tablespoons beet hummus
1 handful arugula
1/2 avocado, pitted and sliced
drizzle of extra virgin olive oil
sea salt
black pepper
Layer all ingredients in the order listed above on top of quality toasted bread (organic, sprouted, kamut, spelt, quinoa, etc.). Drizzle with olive oil and sprinkle with salt and pepper.
