These muffins are a healthy kickstart to your day - and so delicious, nobody will notice they’re jam-packed with goodness!
Makes one dozen muffins
Ingredients
2 cups kamut, spelt, or whole grain flour
1/4 cup brown sugar
2-3 organic eggs, whisked
1-2 carrots, grated
1/4 cup organic butter (use 1/2 cup if you prefer a richer muffin), melted
1/4 cup organic yogourt (I used blueberry, but if you prefer less sugar, use plain)
1/4 cup pistachios or nuts of your choice
2 teaspoons baking powder
maple syrup and 1/4 cup pumpkin + 1/4 cup sunflower seeds to top it off (see below for other options)*
Directions
Preheat oven to 350F.
Combine all ingredients in a large bowl. The consistency should be that of cooked oatmeal. If it’s too dry, add a little more melted butter or yogourt to reach the desired consistency.
Pour into muffin pan, filling each halfway.
Top each muffin with pumpkin and sunflower seeds and a small dollop of maple syrup*
Bake for 20 minutes.
* Hint to making an awesome muffin: it’s all about the topping. Sprinkle coconut flakes, a slice of orange, almond slivers, a slice of banana, anything that strikes your fancy, before baking. It looks pretty and adds tons of flavour to the final product.
Another addition to this recipe if you prefer a sweeter version is a handful of dried, unsweetened cherries or cranberries.
