She kicks it off with a dish that’s equally at home in the oven or on the BBQ. You may find it a starring dish in many of your mealtimes this summer!

Asian Sesame Ginger Salmon
Prep Time: 5 minutes + optional marinating time of 2 hours
Cook Time: 15 minutes
Total Time: 20 minutes

Ingredients
3 tbsp of coconut aminos or soy sauce
1 tbsp of avocado or olive oil
1 tbsp of sesame oil
1 tbsp of rice vinegar
1 tsp of maple syrup
1 tsp of fresh ginger
1 tbsp of sesame seeds
2 green onions, slice thinly
4 (4-5 ounces) salmon filets
optional greens and fresh herbs as a serving base
Instructions
Preheat oven to 450F or set the bbq at a high temperature.
Prepare a cooking tray with parchment paper (for oven) or a reusable non-stick grill (for bbq)
Combine all ingredients except for green onions and salmon, in a larger Tupperware (avoiding the plastic bags because we want to save the turtles).
Before placing the salmon in the marinade, rub the sesame seeds on both sides.
Place the salmon in the marinade. Drizzle the onions over the pieces of salmon. Let sit for 15 minutes or up to two hours.
Once the salmon has absorbed some of the sauce, place the pieces of fish on the tray or the grill. Spread any remaining sauce on the fish.
Cook for 7-8 minutes. After the 8 minutes, check the middle of the salmon. You want it to be slightly underdone, so it doesn’t overcook.
Remove salmon from the oven or bbq and let sit for an additional 5 minutes. To serve, garnish with green onions.
Serve on a bed of fresh spring greens or arugula, with chopped herbs sprinkled on top (chives, cilantro, basil, dill…).
*** note: If you want to caramelize the salmon in the oven, turn broil on for the last minute of cooking, while keeping an eye on it.
