Watch the results roll in with this salty/ spicy treat!
For many of us, today will be all about watching the U.S. election results come in. After all the hand-wringing of the previous months, it may be time to cut yourself some slack and go for comfort food tonight (tall glass of wine optional!).
These vegetarian nachos qualify as dinner, loaded as they are with protein and good-for-you veg. Better yet, on a scale of 1 to 10, they’re definitely on the easy-peasy side. Don’t be afraid to really load your ingredients as the chips make a great vehicle from plate to mouth.

Spicy Lentil Nachos
INGREDIENTS
For the Spicy Lentils
- 2 tbsp. olive oil
- 1 garlic clove, sliced very thinly
- 2-3 tbsp pickled jalapeños, diced
- 1 15 oz can lentils, drained and rinsed
- 1 tbsp chili powder
- 1/2 tbsp cumin
- 1/2 tsp salt
- freshly ground black pepper
For the Nachos
- Tortilla Chips
- Shredded Cheddar cheese
- Red Pepper, diced
- Green Pepper, diced
- Green onions, diced
- Additional pickled jalapeños, diced (if you like it really hot, but remember there are already jalapeños in the lentils)
INSTRUCTIONS
1- In a saucepan, heat olive oil over medium heat.
2- Add garlic and cook for 1 minute, being careful not to brown it.
3- Add jalapeños, cook for 30 seconds.
4- Add lentils, chilli powder, cumin, salt and pepper and cook over medium high heat for about 3-5 minutes.
To Assemble Nachos
1 - Preheat oven on broil.
2 - Line a baking sheet with parchment paper.
3 - Spread nacho chips evenly on sheet.
4 - Sprinkle cheese (as much or as little as you like).
5 - Load the Spicy Lentils, peppers, green onions and jalapeños.
6 - Place nachos under broiler. Ovens differ but most importantly DO NOT WALK AWAY! Nacho chips can burn quickly. So watch and rotate pan as needed and broil until desired doneness. I like mine a little on the darker side.
7 - Remove from oven and serve with:
- Salsa, my favourite is Neals Brothers Organic Salsa “Oh-This-Is-Hot”
- Guacamole
- Sour cream, or make it healthier (but just as tasty) with Plain Greek Yogurt
