With the steamy heat of summer in full throttle, these light and refreshing takes on popsicles are the ultimate cooling snack. Packed with ingredients such as fresh berries, garden herbs, flower petals, and almond milk, they’re the modern (and much more nutritious) equivalent of the freezie pops of your childhood.
As an added bonus, one version kicks your iced coffee up a notch, while the last recipe can be reserved for cocktail hour!
5 Popsicles to Beat the Heat
Watermelon Peach Pops
In a blender, combine:
4 cups watermelon
2 pitted peaches
1 cup organic kefir
1 handful fresh mint
Pour into popsicle tray, freeze and enjoy.
Almond Mango Joy
1 1/2 cups unsweetened almond milk
2 cups pitted mango
1 banana
1/4 cup hemp seeds
1 pinch allspice
For a smoothly blended version, use your blender before pouring, otherwise dice the mango and banana, then mix the remaining ingredients by hand.
Berry and Greek Yogourt Protein Punch
1 cup blueberries
1 cup raspberries
1 cup plain Greek yogourt
1 handful fresh basil
1 handful edible flowers, such as violets (fresh mint can be substituted as well)
Blend all ingredients except the flowers. Fold in the petals before pouring into popsicle moulds.
Coffee Cocoa Fudgsicles
1 cup unsweetened coconut milk
1/2 cup unsweetened cocoa powder
1/2 cup espresso
1 avocado, pitted
3 tablespoons maple syrup
Blend all ingredients until the mixture is smooth. Pour into your popsicle tray, freeze, and enjoy as a yummy pick-me-up.
Marvelous Mojito Pops
1 1/2 cups fresh lime juice
2 1/2 cups perrier
handful fresh mint leaves
1 lemon, peeled and cut into quarters, then eighths
1 tablespoon honey
4 tablespoons light rum
Muddle all ingredients together, mashing the mint leaves and lemon pieces. Pour into moulds and serve at your next cocktail hour!
